Stone fruits are those who have a stone inside, fruits such as the apricot or the peach among many others. Usually they present a sweetness or kind of an acidic taste, a pleasant and intense flavour and many nutritive properties. Its main use is culinary, especially as a fruit table or in desert like cakes or even for breakfast or as an healthy snack, but you can also use it in form of a juice or condiments in all your main courses. Stone fruits are a spectacular source of nutrients for the organism because of its high percentage of vitamins, minerals and antioxidants. Vitamins C and potassium levels stand out which make it the main source for nutrients for the human being. Besides it contains a high percentage of water representing between 80% and 95% of its weight. Stone fruits are also very important for the proper functioning of the digestive system thanks to the high percentage of fiber they contain. Stone fruits are practically free from saturated fat and contains besides a lot of instantly soluble carbs which make them a perfect source of energy.
Stone fruits production is the main crop of non-citric fruits in Spain. The surface of crop of this variety reaches the 150.000 hectares of space. If we analyse each case, the peach find itself growing fast while the cherry is the fruit that most space is losing. Stone fruits exportations still show the same trend as the peach was exported in the past few years on average with 300.000 tonnes a year representing more than 300 million euros a year, but it is the nectarine really that wins this contest by exporting 400.000 tonnes a year with a total value of 400 million euro. In the Region of Murcia 95% of the production of this fruit is exported which generate more that of 25.000 hectares of crop, and 20.000 people working in it and for it.
